I looked at your ss and you have posted that you gave 2units this am?
You must stick with the same dose with Lantus because of the shed needs, so jumping from 3u down to 1u, and then up to 2u is not good for Trey at all.
About your vet being upset, I would be upset if my vet because 3u looks to be too much insulin. What did your vet say about all the highs and lows? Is your vet the only one you can use for Trey? What about getting a 2nd opinion from another vet?
Remember: Trey is YOUR cat and your vet is to provide you with service. What if you knew that a med was harmful to cats and your vet wanted to give that med to Trey? Would you just say OK? No! You would say that will harm Trey so don't give that to Trey.
The same should apply to this situation. The vet may well be telling you to give too much insulin and overdosing Trey. There is nothing wrong at all with giving 1unit Lantus for 6 consecutive shots to let the dose settle with Trey and to see if you can get a more even, flatter, milder curve.
Then after the 6 shots, you can decide what is needed. The protocol used here:

Your vet may be upset, but I bet your vet does not know enough about FD because a dose of 3u is too high as a starting dose for any cat. There are some cats who never need that much, ever. Normal starting dose for most cats are usually 1unit BID or even maybe 0.5unit BID, but never 3units.
it's ultimately up to you what you do for Trey, but I would say that you need to give the 1unit a chance to settle and work for Trey.
Please let us know if you gave 2units this morning or meant to enter 1unit into the amps field on the ss.
