Looking at her spreadsheet it looks like once she settled into that 3u and her shed depleted from the 3.25u it just isn't quite enough insulin for her. If she was my girl I would take her back up to the 3.25u. I know that 49 made you nervous but it really wasn't dangerously low especially with these longer lasting insulins like Lantus and Levermir. Musette has gone that low and lower before and had absolutely no problems with it.
I got curious awhile back and decided to run a curve on one of my civies Lady Jane Grey, and she never went above 45 even right after eating, so if you look at when Celle hit that 49 (right at nadir) so anything after that she would be starting to rise. So to me at least it looks like that 3.25u was perfect for her, while 3u looks like it isn't enough now that her shed has adjusted to that new dose.
