Tummy Troubles: could it be the new food?

Hello and happy Saturday to everyone. I have a question of a somewhat sensitive nature. Of course, you all have cats so I don't expect it will be particularly scandalous! My kitty was diagnosed in mid-April. Switching him to wet food was a huge challenge, but I've finally found a couple he seems to really like which he has eaten well for the last several days. We seem to be getting into a consistent four times a day feeding schedule, at last! (Well, mostly consistent - he is a cat after all). He is primarily eating Sophisticat Flaked Trout. I know there are some concerns about so much fish, but I think for just now I need to keep him whatever he will consistently eat until the new schedule really takes hold. Then I'll incorporate mostly non-fish flavors. He's gotten so skinny, I'm just desperate for him to eat anything at this point.

Here is my concern: his stools have become loose and pale. It seems to have started within the last couple of days. It's not full-on diarrhea, and he hasn't had any outside-the-litter-box accidents. Could this be due to the change in diet? He's also been drinking a lot of water the last couple of days, so I suppose that could be contributing to it, as well. How worried should I be? I've read about pancreatitis in DB cats. He is eating better than he has been since DX and doesn't seem to have any tenderness in his abdomen. He is a little lethargic, but that's not new - he's not felt good since this all started.

Regarding his insulin dosages, upon advice of my vet, we're on day three of no insulin - his numbers just kept going up and up as we increased the dosage. Last weekend I took him off it for about two days and then started over with .5 units twice a day (thinking I must have missed the right dose along the way - I didn't know how important it was to do multiple BG tests a day at the time), and still got a whopper of an inverse curve. So, we're off it again for a few days and I'll be speaking to the vet tomorrow about what to do (numbers in the 300's - nowhere close to good, but he was much, much higher).
 
I have no experience with pancreatitis. You might post on Health. I do think the vet can do a test to diagnosis and I think their tummy and underbelly are usually sore.

Yes, the tummy upset could be the food. FortiFlora might help - it's a probiotic. And it has the animal digest that makes dry food so irresistible so it might help to get him to eat other food.

You sprinkle it on top of the food just as you would use salt and pepper on your own food.
