Blood sugar readings starting Tuesday evening:
Tuesday evening: 256
Wednesday:
Morning: 288
Evening: 264
Thursday:
Morning: 244
Evening: 230
Friday:
Morning: 143 (Lantus was not administered)
Evening: 328
Saturday:
Morning: 330
Evening: 184 (Lantus was not administered)
He receives a dose once a day if the reading is above 200.
Do you think this dosage is correct?
He eats only Fancy Feast Classic pâté and boiled chicken.

So Lantus needs to be given 2x a day, 12 hrs apart. I'd also recommend setting up a spreadsheet and getting a few more tests throughout the day to figure out exactly what this dose is doing for him! It's not possible to determine that just from the preshot tests.
