I forget, so forgive me for asking, do you feed all canned food now? Do you mix water with the food as some of us do?
Does the Oz man seem to drink a lot? Some of those answers could explain some of the pee amount. Keep an eye on the pee. Usually once cats are on insulin for a little bit they stop drinking and peeing so much. If you feel he is peeing an amount that is more than normal, you might want to check with the vet.
My cat, when diagnosed, was filling the litter box, sections of it were like mud. Now my cats pee a fair amount (a few big clumps per day) but nowhere near what Asher did in the beginning. I do mix water in their canned food and they never go to their water dish to drink anymore.
