Congratulations, Tricia and Fergus! May you have a long and happy life at the Falls!

Just remember, even though he's off insulin, he's still diabetic, so the same rules apply about low carb food and treats. You'll want to test once a week or so at first, then you can space the tests out as far as a month apart (although most mamas don't like to go that long between tests). If you get a blue number, feed and test again in 2-3 hours. If he comes down, all is good. If he doesn't, you'll want to monitor more and possibly post for opinions. The key is to be vigilant enough to catch it right away if he should fall out of remission, which we hope he never does.
