She could be blocked by a bladder stone; That is a MEDICAL EMERGENCY - her bladder could rupture.

She could be in renal shutdown; again, MEDICAL EMERGENCY. No renal function = no life.

she peed last night... i called the vet and he said it might be her body adjusting to the insulin and change of diet. She peed last night during the night or sometime this morning before i woke up. but hasn't peed since, but she hasn't drank much since then either. I'm going to call back in the morning if she either hasn't peed again since, or only peed once. She's fine otherwise though, been very active alert today.

You may want to add some water to her canned food, to be sure she is hydrated sufficiently and to help prevent constipation from the diet change. Since there are fewer carb fillers in high protein diets, constipation seems to happen with some cats until they become accustomed to it.

If she is having issues with not peeing often and has not had a bowel movement in 2 days, you need to have a vet check her as she may well be constipated and unable to do anything about it.

It may be necessary to add water to her food, I added equal amounts of water to food, and if constipated, you could also add miralax or restoralax to the food, but be sure to add more water to the food with the powders.
