Newly Diagnosed little girl

My 9 year old little calico was just diagnosed today with diabetes. When she had her lab work done it was 457, we immediately got her started on Lantus (insulin) starting out 1unit every 12 hours. We are also workign on controlling her diet with a high protein, low carb diet. Food can be a challenge because she has food allergies and sensitivites. Now the challenge is to get her blood sugar tested a couple times a day to get a reading. She tolerates the shots, but is not feeling the blood testing. Any tips on that would be very helpful.
 
One thing that may help is to use a low carb treat every time you test, whether you are successful or not. Obviously, use something that won't set off her allergies.
Do you know what specific allergies she has? How were they determined?

I'm not going to overwhelm you with too much information now, just going to point you in the direction of some reading that will do the overwhelming for me :)
I was in your position a few weeks ago, so I know how you feel (as does everyone here).
