Welcome! I switched both of my cats to low-carb wet food after Mia's diagnosis. It takes a little work to transition from dry to wet, but it is doable. I feed them four times a day (every 6 hours). Whatever they do not eat at meal time stays out for them to graze on as they wish. The only time it is important for the diabetic not to have food is two hours before shot time. At shot time, you want to get an accurate BG test result that is not impacted by food, so you take the food up two hours before. Then, at shot time you 1) test, 2) feed, 3) give shot.
Young Again Zero Mature is a cat food without carbs. It was helpful to me during the transition from dry to wet, and I still use it crushed in some water as a test treat for Mia and a food topper when she needs some incentive to start eating her meal.
