Looks like an OTJ kitty. It isn't uncommon to get a yo-yo movement when they first go off insulin.
Have you tried reducing the carb amounts in the food to see if it will bring his numbers down? So if you generally feed 7%, try a 3% and see if you get lower numbers. It might give you flatter numbers overall.
But not too shabby, regardless!
