You say the Max Cal is lower carb, when I checked it out on Catinfo.org it says 14%. That's a big high for a diabetic cat.
It's not so easy to increase the fat% because she has pancreatitis.
Is there a "normal" for protein and fat? Not sure what to look for.
 
Under 10% calories from carbohydrates, then more protein than fat is desirable ... and expensive. If you can get it 50/50 protein/fat, you're doing pretty well.
