Noa's Caretaker

Hello, Noa is currently sitting in a blue valley, and i'm wondering what can i possibly do at this point. You see: i'm currently homecooking for her (guided by a veterinarian nutritionist) and her current diet sits between 4-5% calories from carbs; usually a bit of pumpkin or carrot since she has such a big appetite, i find myself needing bulk up her meals a little.
Nutritionist says there's no issue if she doesn't eat the veggies, so that leaves me to ask: What if i just take all carbs out and add a bit more meat to offset the lost volume? I have read that "absolutely zero carbs" is not something you might wanna go with. I tried it once and she had a mysterious spike into the 300's that spooked me out of it, but could also have been Noa's liver being the jumpy kind.
Either way i'd love to know if there's any anecdotes and knowledge about this.
