Hello I’m new here. If I’m supposed to give my cat an injection say 8am and 8pm, but I randomly check his sugar at 6am and it’s like 260, do I give insulin early or just wait until feeding time?

Ideally it's test, feed and shoot same time every day. Do not shoot early or late, try to keep at most 15 minutes either way. Random checks are not meaningful, what is important is to check BG before shooting so you can have an idea if it's safe. It is also important what insulin are you using, they have different effects and requirements. The more experienced people around here will give better advice.

The only time you withhold feeding is 2 hours beore the preshots meaning the first test in the AM and PM
You should also check the BG a couple of times during each 12 hour cycle
