Vet has recommended I increase the Lantus dose from 3u to 4u. Is that too big a jump?

Yes. Usually 0.25-0.5 unit increases are what's recommended here.

You might miss a good dose that way. Looking at the spreadsheet I think you can increase to 3.5.

Did you give insulin the morning of the 29th? The units is missing that day. A skipped shot would influence the numbers.
