good weight loss management plan

just looking for feedback (no pun intended). i know there is a ton of info to be googled/read. is the one oz. per pound rule fairly good for a FD?
that would be 2 cans a day to put larry at 11 lbs. he is now at 14 (or maybe gained some, feels it) since the vet 4 wks ago. b4 he lost he was a whopping 18 lbs or so i am guessing. he is a huge cat. his feet r bigger than my 14 lb dogs! they r twice the size of the other cats. he is super long, and tall. so i think 11 would be great for him. he was about 4 lbs when he showed up, at abt 9 mos old. he was sooooo skinny. then i found a vet record where he was 9.2 lbs in 2004 (he may be 11 yrs. not 10 this yr. i now realize), and i am sure that might be an ok weight, but i want to shoot for 11.
in vry simplistic terms, how would i do this so that he doesnt lose too fast? or be too hungry? if i just automatically only give him 2 cans a day would he lose too fast? too much discomfort?

Until he is well regulated, to maintain his weight, you may need to feed him 25 to 50% more food as he can't digest it properly.

Weight reduction is best done slowly, for safety. Too rapid weight loss may overload the liver with fat, resulting in hepatic lipidosis (fatty liver) which completely messes up digestion and can be fatal. Try small decreases in food per meal. Adding a smidge of water helps keep the volume up and calories down.

The one oz per pound is just a very rough guide but a goo starting point. I would weigh Larry weekly at same time of day and the increase/decrease base on the measured weight.
