I have been giving my cat one can of fancy feast in the morning with his insulin and another in the afternoon with his second insulin. Then at night before bed, he cries wanting more food. Am I feeding him enough? Am I feeding him too much? I feel like that is a lot already.
 
What's his weight? Is he a large-boned cat? FF cans are three ounces each. Cats are natural grazers.. Play/hunt a bit, eat a bug, wash back and tail, grab a mouse.. Walk thru grass, eat a caterpiller... They like to spread their noshing out. Perhaps divide his food into three feedings? He may feel better, avoid stomach acidity.. And perhaps he feels a bg drop and feels better if he can eat to avoid a very mild hypo event?
 
It might be wise to consult your vet about the number of calories your cat should have daily. I always free feed.

Also have a look part way down this page at catinfo.org. There's a formula there you can use to work out approximately how much to feed Monkey. Going forward, keeping a daily log of how much you feed Monkey will help you to keep track of his calorie needs. If he starts gaining too much weight, feed less; if he's losing weight, feed more. If you need to reduce his weight, then it needs to be done v-e-r-y gradually (more about this also at catinfo.org). For the long haul, digital baby scales are reasonably priced and are a brilliant aid to kitty weight management.
