Looking at your ss, I am not sure why you increased to 3.5u. You were getting numbers in the 100s when you were on 2.5u and 3u, but since you don't have test numbers for the mid area of the cycles, and those are the numbers on which you need to choose your dose. It could be that the 3u was plenty good enough and your cat was dipping low, then coming up high at shot time.
By going up to 3.5u, you likely caused the shed to overfill and that's why you got your green preshot number.... too much insulin.
You were wise to go with the 2.5u and now, just wait on that dose until you are seeing curves more level.
You can also try smaller increases; if after a couple days / 4 shots, the 2.5u is a bit too low, try to go to 2.75u dose and not right up to 3u.
Try to do your increases slowly, holding each one for at least 6 shots / 3 days, and you may have better luck.
If you find that numbers are going low mid cycle, you can use food manipulaton. many people use 5section auto feeders and they can leave food for the cat to eat at a couple spots during cycles. If you leave food to open up at say +4, the food should help to slow any big drop your cat may be doing.
ETA: Don't forget that your shot times are now changed. You shot the 2.5u at +14 so tonite, your usual shot time will be moved 2 hrs later. Depending where you are tonite, at usual shot time, you may be able to shoot 2.5u again, an early shot, just to get back on schedule, BUT it depends what your cat's BG is at the normal shot time
