Well, DM dry is13% carbs. It is not that bad carb-wise. We generally recommend at least under 10%, and under 7% is even better. I feed between 3-4%. However, the DM has very low quality ingredients. Here are the first few:
Poultry by-product meal, soy protein isolate, corn gluten meal, soy flour, animal fat preserved with mixed-tocopherols (form of Vitamin E), corn starch, animal liver flavor...
Notice how it contains no real meat, just by-product meal. Doesn't sound too tasty, does it? It also contains CORN and WHEAT - which are carb loaded, and can both cause allergies and skin issues with cats. Not to mention, when do you ever see a wild cat chowing down on a cob of corn?
There are some "low" carb dry foods, however, they all contain some kind of starch to hold the food together, and even if the carbs are below 10%, those starches can send some carb-sensitive kitties into the high numbers. Innova EVO cat and kitten is low carb, as is Wellness CORE. Here is the beginning ingredients for CORE:
Deboned Turkey, Deboned Chicken, Chicken Meal, Whitefish Meal, Herring Meal, Peas, Turkey Meal...
See that this contains real meat. There are veggies including potatoes for starch but there are NO corn/grains.

What wet foods have you tried? I find Fancy Feast is the best go-to canned food brand... I don't know what they put in it (and honestly I don't really WANT to know LOL) but tons of kitties LOVE the stuff and there are a lot of diabetic friendly varieties, even for picky kitties. There are many tricks you can use such as sprinkling the wet food with Fortiflora, a probiotic with animal digest, which is the same stuff they coat dry food with to make it taste so good. You can also try using tuna juice, parmesan cheese, or even just warming the food up to help release the smell.
