Sweet Spot

Good Morning,
Julie was sweet enough to help me prepare for "next time" Spot's AMPS or PMPS is in the blue. I chickened out giving insulin yesterday morning, as Spot is new to blue. Also, after hitting blues twice, he bounces into black. I have to get over my fear and shoot when the next blue comes around.
Though I have a "hypo kit" on hand, I always considered that for emergencies.
But as Julie pointed out to me today (I am still learning, my apologies!), you can start to "control" things with high carb foods if he drops too fast the first time I try this (specifically, my fear of shooting while in the blues and going down too fast...that is what scares me).
So on to the main question/issue:
Is there a high carb food or treat you use that is a bit easier on cats who have a sensitivity to carbs/grains?
Spot has been on Fancy Feast Chicken Classic for many, many years. We discovered it by default because he would always have stomach issues with dry foods. It was a miracle. He never had an unhealthy stool since making the switch EXCEPT when he would be given a higher carb snack/treat. So he actually doesn't get treats and remains in love with grazing with Fancy Feast. If you can believe this, he refuses even real chicken! He is a FF junkie.
I recognize this high carb food would only be used during a fast drop time, but hate to make him suffer with diarrhea, etc.
