I'm not sure why shrimp would bump her numbers. However, the Wellness, Lobster, Shrimp, and Herring is a medium carb food so maybe there is something to carbs and shrimp. (Please don't tell Dyana's J.D. or Carl's Bob -- shrimp is their treat, too!!)
As far as feeding schedule, I would look at not feeding after nadir as an experiment. In general, you don't want to feed after nadir. Food after nadir has less insulin to counterbalance the effect of food. However, if a cat's pancreas is producing endogenous insulin, food will stimulate insulin production and bring numbers down. It's one way to know if a cat's pancreas is working.
Shadow's numbers are good. There's an indication that her pancreas is working. If you hold her food and don't feed past nadir, you'll want to keep good records to see what the net effect is on her pre-shot numbers. If those numbers don't look as good after a week, I'd go back to giving some food at +8 or +9 and evaluate if that's helping with the pre-shot numbers. Using food to manipulate the curve is on a trial-and-error basis. All you can do is try a strategy out and see if it works for your cat.
