I would suggest eliminating foods he's being picky with, and not try to mix them with ones he likes. Because even if he eats the mix one day, if he starts associating the flavor he likes with the flavor he doesn't, he might then turn up his nose at the one he likes alone (I went through this with Gabby--it was like cat food alchemy).
Does he eat all the food at once, generally, or does he try to graze? If he's gobbling a small amount and leaving the rest, you could try splitting the feedings up into amount you know he'll eat.
If he goes to his food, turns his nose up and then meows at you to feed him because he's hungry, then you may be in for some more experimenting with foods. I would often use tuna, or chicken or salmon powder from the freeze dried treats to sweeten the food up a little bit. He's still recently transitioning, so it may be he's just not used to the texture of the food yet.
You mentioned that you were feeding the FF Beef w/gravy--the high carb stuff, right? FF has Beef & Chicken and Tender Beef that are both the low carb pates, so maybe you can try those? You won't need to feed the high carb anymore as soon as the dose is lowered enough, so I wouldn't try to get him liking those foods. The gravy is the HC part of the food anyway, so that's all that matters when you're trying to boost BG.
