Yesterday's Condo

After last night's low PS, Willie shot up to low blues and it appears he had a nice surf. I was able to get in a jog in the neighborhood once the sun went down, and then sofa cuddles were had. A colleague is retiring at the end of this month, and we had his retirement party Wednesday evening, but some of us decided that a chili cook-off would be a more fitting tribute, as he is a huge chili fan and it is something we've been trying to organize for years. So I had a white chicken chili simmering away in the crock pot overnight. Around 5am, I think the yummy chicken smell was just finally too much for Willie, as I awoke to him licking my face. "I smell chicken!! Is it your face?? *lick* Okay, maybe not. How about your arm??? *lick* Maybe the other side of your face?? *lick*..." and so on. :shock: The store I went to last night didn't have one of my key white chili ingredients (sensibly seasoned tomatoes with corn and okra), so I started improvising and just kept going. Hoping it turned out okay.

Hoping to finish unpacking this weekend. Going to make a trip to the farmer's market for some goodies... contemplating a flat of peaches and a batch of peach preserves. I've got visitors in town next week... my best friend, her husband and two toddlers are coming from Michigan. Can't wait!

That is too funny. Poor Willie!!! He knew he could smell chicken. Chili sounds so HOT, but I bet it will be yummy. I have never used the seasoned tomatoes. That is a great idea.

I got a bushel of peaches last week at a peach farm near hear. They are wonderful. I have to put some up this weekend but we have been eating peach everything this week.

Willie is looking good today. Your chili recipe sounds so good, and nice doing it in the crockpot, too. Sounds like a nice weekend coming up, too!

That chicken chili sounds fantastic. How many are participating in the cook-out? What a neat idea for a retirement party.

Willie, I'll bet you wanted some of that chili. Maybe your mamabean will send the recipe to Mannie so that he can put it on a future party menu. Lookin' good today, Willie!

Nice numbers for Wilie!!! Glad to see him back in the groove!!

You have more energy!!! I LOVE white chicken chili...yum.....hope it was a huge hit. Sounds delicious. Mike makes his famous "Dog Butt Chili"...he's won a few chili cook-offs with it. Don't ask what's in it...I have no idea except there really isn't any dog butt in it and I don't know why he calls it that. He's an enigma. :lol:

Have you ever made the freezer jam? Lots of sugar but yum yum yum!!
 
Good evening, all! The chili was a great success, and the cook-off ended in a 3 way tie (with only three entries!). Honestly, the three were so different, I'm not sure that anyone had a favorite. People brought cornbread, crackers, fritos, and a whole array of fixins' along with desserts. I actually didn't know this, but the colleague that is retiring had brought in two giant pots of chili for the office his first week on the job, so the chili send off was really a totally fitting way to celebrate his time with the agency. I was just glad that people enjoyed my chili experiment!

For anyone interested, the recipe (this actually makes a double batch):
1 lb. boneless/skinless chicken thighs
1 lb. ground chicken breast
1 medium onion, diced
1 poblano pepper, roasted and diced
6 cloves garlic, minced
2 cans white beans, drained and rinsed
1 can diced tomatoes with juice
1 can okra, chopped (especially chop if your audience doesn't like okra... they'll just think they're peppers!)
kernels from 2 ears of sweet corn
2 packets of William's white chicken chili seasoning
1 carton chicken stock
cumin, coriander and chili pepper to taste

Cook the chicken and onions over medium high heat until all pink is gone. Add the garlic and stir until fragrant. Add in the poblano once it is roasted and skin is removed. Coat mixture with seasoning packet powder. Dump into crockpot. Add in the beans, tomatoes, okra, corn and stock, give a good stir and cook overnight on the lowest setting. Check the seasoning and add coriander, cumin and/or chili powder as you feel is needed.

Need to do some shopping tonight, but waiting to see if Willie does another jump tonight. DS is here, so he's hanging out with her and spending time in the yard as well. In other words, life is rough!! :lol: :lol: :lol:
