It just looks to me like his pancreas is not making enough endogenous insulin to keep his BG down in normal numbers.

You might want to out him back on insulin and try just giving him a drop of insulin every 12 hrs to see if he gets back down. Maybe a little support now will preclude a lot of juice later. Paws crossed.

I will try. I just don't know about my job. I have to keep it, though, so it's the thing that's in control right now. It's the nose dive he does that has me worried. Even on a drop, before, his numbers would drop a LOT.

You might have to tweak his feeding schedule. But the longer he goes without insulin support, the less likely it is that you can get him back into remission.
 
Good idea to give the drop and use food like you did before. If that makes you too uncomfortable while at work maybe you can start him back this weekend when you are off from work.
