So I have tried to get some more numbers to help fill in the data on the sheet and would like some advice on what to do. Does it look like I need to go up to 3.25 units or do I still need more AM data?

I would have done it tonight as Sienne suggested. Good job on collecting additional data. Try to keep getting additional tests wherever you can - every test you can put in the spreadsheet helps to make the picture that much clearer

Thanks for the feedback. When should I be worried about how high the dose is getting though?

You're fine to increase. We don't really get focused on the dose until a kitty reaches 6.0u and then we encourage testing for a high dose condition. (See Crystal's SS.) The bottom line is your kitty needs the insulin it needs in order to get the numbers into a better range. It's like if you needed thyroid meds. Some people need more and some people need less. It all depends on your body and what it needs. It's the same with humans and insulin.
