The easy answer is because he's a cat.
Insulin is a hormone....it doesn't act the same way as other medications. If you've ever been around a teenager (or were one once yourself) you should remember how hormones can be very unpredictable. One minute your teen is laughing and the next minute they're slamming the door and screaming how much they hate you.....Ahhhh, the good times!
OK...seriously though....You need to be getting at least 1 test on the PM cycle, every night at least before bed (usually at least 2-3 hours after the shot depending on what time you shoot and what time you go to bed). Without having data on the PM cycle, you're missing half of what's going on inside Macho's body.
Have you decided on a dosing method? The advice we'd give depends on which method you choose, Tight Regulation or Start Low, Go Slow.
TR gives the best chance at remission, but requires the cat only eat a canned or raw diet and requires a little more testing (which can mean losing some sleep on some nights)
SLGS doesn't require quite as extensive testing, but you should still test at least 4 times a day and then once a week, do a complete curve (test every 2 hours for 12 hours or every 3 hours for 18 hours).
You've been testing enough on the AM cycle to do TR (since 5/21) but you'd need to commit to getting at least that one "before bed" test and be aware that you may have to set an alarm for later in the cycle if necessary.
Either way, I think you should probably go ahead and increase his dose to 1.75
