Don't hesitate to use a little higher carbs, if necessary, to keep him safely over 50 and take a break from tests (and also a nap!).
The higher depot will affect his numbers today and tomorrow.
How is he dealing with all the testing? He is seeing pretty flat cycles. Especially with the higher carb, you can take some breaks from testing (need not test every hour, that is).
You need to look after yourself to be able to take care of him.
But, my concern now is that his excessive hunger got controlled, can’t really get him to eat well like before.That's great! You want to avoid dry food and treats because they metabolize differently from wet food. With wet food, you know that the carbs are out of the system in 2 hours. But with dry food, one does not know how long the carbs continue to affect the numbers and when it is safe to stop testing.If he doesn’t eat MC (a/d - he used to love it) I give him high carb snacks. Is that ok too? Like pill pocket or greenies? Just to keep his BGs high?

You can also add a little honey/syrup to LC food to increase carb% - if there is a LC food that he still loves and eats.
Rotating foods can help overcome food fatigue. You could keep the FF away for a few days since he is tired of it and feed Wellness and bring the FF back after a week or so. I find that works with my cats. They get boed of a food but are willing to eat it after a few days of not eating it.I just never thought that I would struggle feeding him anything. He acts like he is tired with Fancy feast pate, and all of sudden he’s gobbling down Wellness core chicken and liver?

I don't think there are any LC pill pockets anymore. Back in the day, I used to use the Allergy Free Duck and Pea (dog version) and they were LC. Don't think they are made anymore. We've had people use Temptations as HC to get their cat higher. But as Bhooma said, the problem is knowing when they are out of the system.
