5/19 Loose Lips - Frozen Banana Peanut Butter Cups

Some of you saw in Trix's condo yesterday that I was making this concoction for my business partner's birthday. I love baking, and I love making candy, so I really enjoy playing around in the kitchen. I'm also vegan, and daydream about one day owning a vegan bakery and sweets shop, so I can prove to the world that vegan desserts don't taste like cardboard, and are just as decadant as their non-vegan counterparts!

However, I made a number of modifications. As it's written, the recipe is huge - it calls for 6 bananas. I used 2 bananas, and that gave me over 30 banana peanut butter cups. The mods I made:

- I used Cheerios instead of graham crackers
- I made these in paper candy cups, rather than dipping them individually. Much easier, and more choclatey!
- I did not make the peanut butter portion the day before...I hadn't read the recipe in advance
- I topped them with crushed salted dry roasted peanuts rather than straight up salt
- I used French Vanilla soy creamer instead of almond milk
- I completely winged it with the proportions

I was a bit impatient last night...took these pictures when they weren't 100% frozen; however, they were 100% delicious!

Oh my goodness!!!! All my favorite things wrapped into one!!! I wonder how many Weight Watcher's points each one is.....I might have to figure that out!!

I have a birthday coming up and for work that is considered a 'cake event' this is going to be perfect. I've been there a few years now so my colleagues attitude toward vegan food has changed substantially in that time - from vegan food = carrot sticks, to suspicion, to yay Serryn is bringing in food, it's going to be awesome :-D :-D :-D :-D :-D :-D
 
Yum!! A bunch of my favourite things in one recipe. I have a friend who is not vegan, but allergic to wheat, eggs, milk and a bunch of other things and with a slight tweak (replace graham flour or cheerios), this would make a great dessert for when we go to their place.
 
Sounds (and looks) yummy! I'd probably make them with all the usual suspects though... real butter, sugar, and chocolate, etc. :twisted:
 
Actually, the chocolate and sugar are "real"...it's just the "butter" that's vegan (and I guarantee you'd never be able to tell the difference!).

Ah, that sounds good...I don't wanna' mess with my chocolate fix! :lol: :lol:
 
I hear ya Carolyn...there are certain things ya don't mess with, and chocolate is one of them. Most - but not all - "real" dark chocolate (the stuff that is healthy!) is naturally vegan. I don't do carob or any other "substitutes."

That's why I'd love to open a really good vegan bakery (someday...far, far down the road!)...so many people don't realize that vegan food is NOT a world of artificial substitutions; it's a world of real, genuine food. What better way to prove the point than to serve cupcakes :lol: ??
