Good Morning, Everyone,

It's COLD here (-26 F this morning in our village!). Rusty is chilaxin' on his perch above the radiator, finalizing the menu for the kitties' Full Cold Moon Party tonight. He has a good AMPS and hopefully it is not part of a bounce from possibly going low last night (his bg was 97 at bedtime, which is often his nighttime onset; Rusty is on Levemir, which has a later onset than Lantus).

I reluctantly decided not to go on the snowshoe hike. My hands don't do well when it is so cold (owing to mildly frostbitten fingers suffered on a wet, icy climb in the 1970s). Although it is expected to get up into the 'teens this afternoon, the wind-chill is supposed to remain below Zero. So I'm staying home and baking cookies. Just finished a batch of "cimmamum" cookies (gingersnaps) and laterwill get to work on "Linzer Augen" (Edward's mother's recipe for thumbprint cookies filled with raspberry jam). I still have some Xmas cards to write, too.

Nice start for Rusty today. BRRRRRRRRR. Oh my gosh. I don't know how you could even function in that cold. I don't blame you on skipping the show shoe. Your hands definitely don't need that. Baking cookies sounds like a great way to pass the time inside. Tarragon is super excited to hear that you made cimmamum cookies!! I am really interested in the Linzer Augen recipe if you can part with it. My guys love that kind of cookie.

Whoops, I meant to put this in Melissa's/Tarragon's condo. But I guess I'll leave it here, too.

Edward's mother's recipe for Linzer Augen [Edward's mother was from the Black Forest in Germany, but she called these cookies by their Austrian name: Linzer Augen (eyes from the city of Linz)]:

"not quite" 1/2 lb. unsalted butter [about a tablespoon less than 2 sticks]
2/3 cup sugar
2 egg yolks
1 teaspoon vanilla extract
2 cups flour
raspberry or apricot preserves


Cream the butter, sugar, egg yolks and vanilla.
Work in the flour. [I use my hands because I don't have a mixer; the dough is pretty stiff]
Roll dough into 40-50 walnut-size balls; put on cookie sheet and refrigerate for several hours.
Preheat oven to 350 degrees.
Indent each ball with your thumb [since the dough is cold, you have to more-or-less shape the balls into little cups] and fill with raspberry or apricot preserves [I like to make half of the cookies raspberry and the other half apricot].
Bake for about 12-15 minutes at 350 degrees. Cookies will be slightly brown around the edges. Let cool for a few minutes on the cookie sheets, then cool completely on wire racks.

Pretty rich. You can't eat just one!! They go quickly :lol:

Looks like you're going to hopefully see another nice cycle tonight :-D Maybe a little lower??

Sounds like you made the right decision to stay home and not go snowshoeing. I mildly frostbit my toes when I was younger, and there is just no fun to be had if you are feeling the cold pain of THAT while you're out. That's another nice thing about Christmas...there is ALWAYS something to do when our plans fall through :-D

Thanks for posting another Yummy recipe Ella! I'm just gonna keep making them as you post them :-D The shortbreads were fabulous btw!!

Brrr on the temps. Sorry you had to cancel out of the hike, but you used your hands in a profitable way today. :-D Careful to hide the cookies from the kitties tonight. :lol: :lol:

I'm really terrible at converting F to C...but stay warm anyways, you sound cold ;-) It sounds like your house smells pretty yummy, mmmm. Hope you and Rusty have a good night :-D

The Full Cold Moon is shining bright and the Circle of Remembrance must be forming about now. There are two very new Guardian Angles arriving at the Bridge tonight. Our hearts go out to Dianne and Desi. Savannah and Tinkerbell are flying free. We and our kitties will always remember our dear friends.

Hi Ella - another late visit for me. It is great to see that greens today for Rusty! YAY! Bummer on the no hike, but better safe than sorry. Plus!: you have cookies! YUM!
