change of plans today... found out today was the 1 day sale for whole chickens at whole foods ($1.29/lb... not organic, but still good stuff!), so I spent the afternoon breaking down chickens and packaging them up for the freezer. While sorting, found some from the last sale... guess I'll be eating chicken for awhile!! :lol: :lol: :lol: Also made a batch (equal to 4 cartons) of chicken stock and have supplies to make 2-3 more batches (at least, once I get some celery!), so will end up being a great value. Went for a twilight 2 mile walk/jog afterwards. Willie was a big help in the kitchen. As in, he did his best to be underfoot, until he decided I was ignoring him, so he'd head outside with a huff, eat some grass, chase crickets and otherwise run around for 5-10 minutes, then come in and do it all over again... for over an hour! Mr. Furry Purry has finished his second dinner and is now curled up next to me in bed.
Also picked up some brown rice and lentils today... I'm really working hard on being healthier, and I have to say, I always find it easier in the fall and winter, what with all the yummy soups and stews into which you can pack tons of healthy veggie goodness without feeling like you're eating like a rabbit. Found a ham shank in the freezer, so thinking that this killer
White Bean and Ham Shank recipe is in my weekend future. Thinking this one would be good to try in the pressure cooker... it is really is so easy, and the herbs and tomatoes really make it just much more yummy than your basic white beans and ham. Also have some beets to use up, so may do a roasted beet and zucchini salad with a lemony dressing. Hoping Willie isn't too low in the morning so I can head to the gym before tackling the housework I skipped today (with liberal amounts of time spent on the sofa watching football!). Have another new church to check out Sunday morning and have a, so it looks to be a busy weekend. I'm using a training program from Runner's World to help me get in shape for a 5K this spring, and so Senorita Trainerpants (as I've taken to calling my chart) says I get to do 3 miles that day. I'm trying to do as many runs outdoors as I can while the weather is still tolerable. I find that even though it at times feels like my lungs are on fire, it is just better preparation than the treadmill (even if the treadmills at my gym DO come equipped with fancypants TVs on them! :lol: :lol: :lol: ).
