At 12MID, Gideon's BG was 145. I was working, and my husband gave him 12% carb food,. He did not want to have to get up again.

That does look like a delayed bounce. Mav used to do that occasionally too on Lantus, so as much of a bummer as it was, I was happy to give him a break from the pokies, when I saw the bounces start.
