With meter variance, there is really no difference between 325 and 341. Meters can vary up to 20%...even the same meter...from reading to reading. So she looks pretty flat.
Bouncing is caused by the liver sensing lower numbers than it is used to and releasing counterregulatory hormones and glucagon which drive the BG up. I'm sure someone has probably let you know that bouncing can last up to six cycles (72 hours). Some cats less...some cats possibly longer. ECID.
No, they don't all stop the bouncing on lantus or levemir. Our hope is that they will and they will flatten out and usually they do but some do not. You might want to check out different condos and SSs when you feel like it and you'll see we have a lot of bouncy kitties in LL.
