? Best Low Carb "Savory Selects"-format wet food for picky eaters?

Hi all! Here's my last post for some added context. I know I've been scarce -- Pants and I had an impromptu extended vacation to the vet med school several hours away to get diagnostics for his anemia. Other than scheduling and miscommunication nightmares on the admin side, all went well. We're still pending results of one last test before they decide how they want to change his meds. They were able to get his abscessed canine out despite the hole in his gum, yippee!!!

Due to his anemia and diabetes, we're worried the healing process will be extra slow, and I'd like to keep him on wet food for the next several weeks as a precaution. Problem is, he's been extremely picky about his pate for months now. Ive tried a number of brands and he'll only really eat Fancy Feast or Friskies, and Friskies gives him diarrhea. :/ Adding dry food to the fancy feast rarely helps. He has tried and dislikes "shreds" format food, and similar results with the chunked fish from Tiki Cat. Soaking his dry food in water has mixed results as well. (We are in the process of starting Dr Elseys dry food, but with how his stitches look, we decided wet food for several more weeks is best)

Maybe due to miscommunication, the vet school gave him some Purina wet food "savory selects" and sent cans home with us. On their own, he wouldn't touch them, but with a few bits of his old high carb dry food he gobbles it down faster than the pate. I want to see if I can find something he likes so I don't have to mix any of his old high-carb dry food in. Purina Pro Plan Complete Essentials: Chicken and Rice Entree is what we got for him, format looking like the below:

TL;DR: The food sheets that have been going around don't reliably indicate wet food format, and Pants is picky. What sort of low carb "cuts"/"entree"/"savory selects" format wet food do your kitties like?
 
This might sound silly but something we're trying with our Peanut is actually blending her food so its the texture of the pate she loves while keeping her on low carb. We also mix about a third of a salmon churu (shes a fishy girl) to make it more enticing
 
Will he eat cooked chicken? If so making your own food using a meal completer might be an option.

Jude is a bit of a picky eater, but he likes all of the savory selects flavors.
