Cat's gluclose is 194. Should he get his dose tonight?

He is normally much higher. Yesterday at 8:40PM, his gluclose was 452.

Just now I tested and it is all the way down to 194. Of course he doesn't eat until 8PM.

It could go up by then. Is there a specific number that I should hold off on a dose of insulin ?

He gets 1 unit every 12 hours.

I spoke with the Doctor and she said give him one unit as usual and complete a curve tomorrow (which is today). I tested before dose time to be sure and it had risen to 247, so I was not concerned about it really.

But, for our curve, we're doing that every 2 hours for 12 hours and so far it's been 380, 327, 337.

I do not have a spreadsheet yet. I am confused as to how to create one. I was tracking numbers by hand in a little pocket book that came with the monitor.

He's been on 7+ for half his life. But, i have been trying some wet Fancy Feast as I heard that this is a better diabetic choice d

If he will eat wet food, then you want to slowly transition him to a low carb canned food. Not all wet food is low carb. Pates and foods in jelly are usually low carb while those in gravy are not. In Fancy Feast, the low carb variants are the Classics (pates), Roasted and Flaked. If he is a kibble addict, there are low carb options in dry food as well – Young Again, Dr. Elsey’s Cleanprotein and Wysong Epigen 90.

A change to a low carb diet can significantly impact a kitty's BG numbers and greatly reduce the need for insulin. So any transition in diet when already on insulin, has to be made gradually and with careful monitoring of the BG (with home testing) and insulin requirements. We have had cats that have gone off insulin with just a change from high carb kibble to a low carb canned diet.
