Although Amy has started drinking again on her own and eating slightly, she still doesn't have full appetite back yet. I will still force feed before her insulin doses. Question is, how much should she be force fed before dosing? A quarter can, half can? A half can is a bit much I believe. How much is enough?

Do you think your kitty is nauseated? You may need some ondansetron from the vet. Ask for a script and then you get the ondansetron from a regular pharmacy.
If your kitty is not eating, try any other food to tempt her, even if it is not low carb. Eating is more important than what she is eating at this point. I remember when my cat Sheba was first diagnosed she found it hard to eat.

Maybe you could try some of these suggestions.

She became ill one morning. That was the day she got taken to the doctor. And it was almost a week since she used the box after being taken to the doctor. I'd been giving her small doses of Miralax as she did not need yet another problem on top of what was already happening. Once she used the box, she started eating and drinking on her own. She can no longer have her usual Cat Lax. It's full of caramel and other sugars.

@Shell would you like someone set up our spreadsheet for you?
I explained how it works in this thread , I know you read it because you thanked me.
I hope Amy starts eating better or your vet can tell you why

My mom is going to help me calibrate the glucose monitor. She's a nurse, so she's going to take a look. If I need some help with that, I will certainly reach out. :) Thank you so much.

What do you mean help calibrate the glucose meter?
What type of meter is it? Human maters do not need calibrating.

With a human meter you don’t do anything at all except take a drop of blood and do the test. The result that shows up on the meter is what we use.

She hadn't seen the meter at the time she said "calibrate it". It's a human meter. I wasn't aware that any meters needed calibrating. She is checking it out and will demonstrate how to use it though.
