Is it safe to give my cat fresh cooked fish and chicken, and remove the dried cat food altogether?

Hi everyone
I'm new at this so please be gentle. A few months ago we have had a diagnosis of diabetes in our female cat, Rubble. The journey has been a difficult and upsetting one thus far, with her having a recent 2 day stay at the vets for stabilisation. I understand the whole concept of carbohydrates and proteins, but I would like to know if it's safe to give my cat just proteins. She is constantly craving food, and seems to have a very strong liking to fresh cooked white fish, salmon and cooked chicken, instead of her usual cat food. Is this ok?
 
No supplements, but all bone free food. Boned salmon and white fish, which was for us, and cooked chicken, no bones. She's gone off her own food, so we had to replace her meals with something. Plus her insulin twice a day.
 
That's not good...
You can't feed only meat. Cats need organs, bones, meat and vitamins.
You can't find a complete raw food? Or canned food she will eat?
