Hi Sue...the cake is like a coffee / pound cake. It has cream cheese, lots of butter, marachino cherries, and nuts. With all that, it can't be bad :joyful:

Festive Holiday Cherry-Pecan Cake
Ingredients:

8 oz. Cream Cheese
2 cups Butter
1 1/2 cups Sugar
1/2 tsp vanilla
4 Eggs
2 1/2 cups Flour
1 1/2 tsp Baking Powder
3/4 cup well drained Maraschino Cherries
1/2 cup chopped Pecans
1/2 cup finely chopped Pecans

10 inch TUBE pan, well greased

Icing:
1 1/2 cup sifted Cofectioner's Sugar
2 Tablespoons Milk



1. Preheat Oven to 325 F

2. With mixmaster Blend Softened Butter and Cream Cheese with sugar and vanilla. Add Eggs and mix well. Mix baking powder with 2 cups of the flour, and slowly add to the mixture

3. Separately combine 1/2 cup of flour with cherries and 1/2 cup of chopped nuts, fold into the batter

4. Grease 10" tube pan

5. Sprinkle bottom of tube pan with finely chopped nuts (use 1/2 cup or less)

6. Pour bater into the Tube pan

7. Bake 1 hour 20 minutes at 325 degrees F

8. Cool in pan for 5 minutes, remove from pan and cool

9. Mix 1 1/2 cups sifted confectioners sugar and 2 Tablespoons Milk.

10. Garnish with cherries and pecans

I personally use walnuts instead of the pecans, you choose your favorite nut.

This recipe is a family favorite.

Just want you to know as I just ate the cake...... the cake is not a fluffy light cake, it is a heavy moist cake - I guess from all the butter and cream cheese that's in it. It's different and I'm being honest - you may not like it so maybe try it before Christmas as I don't want you to be disappointed.

Sonia & @Ti-Mousse .....I just figured out why the cake didn't taste like it used to....I put in double the amount of butter. I don't know how that happened but I just looked it up on the internet and the recipe calls for 1 cup of butter where I used 2 cups of butter. That is why my cake was overly moist and heavy. The vanilla extract and flour amounts are different also. I am going to try this recipe for Christmas and see how it comes out.
I am sorry for the confusion but I'd rather you have the CORRECT recipe which follows below:

Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup butter, softened
  • 1-1/2 cups sugar
  • 1-1/2 teaspoons vanilla extract
  • 4 eggs
  • 2-1/4 cups cake flour
  • 1-1/2 teaspoons baking powder
  • 1 jar (8 ounces) maraschino cherries, drained
  • 1/2 cup chopped pecans
  • GLAZE:
  • 1-1/2 cups confectioners' sugar
  • 2 tablespoons milk
  • Birthday candles, optional

  • In a bowl, beat cream cheese, butter, sugar and vanilla until smooth. Add eggs, one at a time, beating well after each addition. Combine flour and baking powder; gradually add 2 cups to batter.   • Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes; remove from pan to a wire rack to cool completely.
  • For glaze, combine sugar and milk in a small bowl; stir until smooth. Drizzle over cake. Decorate with reserved cherries and candles if desired.
Editor's Note: Green maraschino cherries may also be used for garnish.

When I looked at the ingredients, I thought it's not something to lose weight but it must be very good... :p Thanks for correcting, you're saving my cholesterol. I'll definitely try it !:)
