My vet told me to increase to two, and also I have the pens so can't increase by partial units.

We recommend you only increase the dose by 0.25 units each time. This will keep your kitty safe and you will not go past the best dose.
I agree with @tiffmaxee that you should have gone to 1.25 units.
Are you able to go out and buy some syringes?
You can use the insulin vial from the pen with the syringes.
You will need U-100 0.3ml 30 or 31guage, 6 mm or 8mm insulin syringes with 1/2 unit markings. Cost around $13 a box of 100
If you live in the US you can buy them from Walmart. They have the ReliOn brand or if you are not near a Walmart there are also other brands such as B/D, Sure Comfort and Unicare.

Below is your previous condo I found. We like to link them so we can get a little history. I see Wendy and I suggested you get syringes then. I can’t stress enough how important it is to not increase in unit amounts as you can miss a good dose or cause a hypo. I used to buy my syringes on line from Walmart and ADW.

Looking at Percy's SS I see you have missed some preshots.
It is really important to always test the BG before every shot to make sure it is safe to give the insulin.
And a really good habit to get into is to always get a before bed test in because cats often go lower at night.
If the before bed test is lower than the preshot then you know it will probably be an active cycle so you will need to set the alarm to get up and test a bit later in the cycle.
How often are you feeding each cycle?
We recommend feeding before you given the insulin and again a couple of times during each cycle, preferably in the first half of the cycle when the insulin is strongest. If you are not at home during the day and also for the night time....an automatic feeder is a godsend.
Have you thought about whether you want to do the TR or the SLGS method?
