We are doing Cosmo's curve today. I got his morning number, he's eating now. Do I start the 2 hours from when he starts eating or when he finishes?

Two hours from when you give his insulin. :) Oops! You're not giving insulin yet are you? Then I'd start 2 hours from when he started eating. Probably not critical. Might I ask why the curve if he's not on insulin?
 
No curve needed before insulin. Yes, I’d err on the side of a lower dose so go with 0.5 u. He’s not that high. Get a +2 test to see where he’s heading. Post for help if you need it. I’m going out for several hours.
 
The next few days your goal is to gather baseline data and allow his body to adjust to getting insulin. The 0.5 u dose might be too low but it's early days so I'd stay at that dose for 4-5 days minimum.

Thank you. He just had some food in between his last 2 checks. His BG went up a bit. That's to be expected. He has his next insulin at 9:00 along with his next BG check.

Stay the course. It's important to remove all food at least 2 hours before the pre shot BG test so you know that the planned dose is safe. It's not as big a factor at a low dose like this but you might as well get into the habit. :)

Normally I get up at 6:30, check his BG and feed him. I work normally all day. Now that we started insulin I need to give it to him at 9:00 am.

Can I stay on my normal routine as far as feeding? 6:30 check BG, breakfast, insulin at 9:00 am?

It's probably better to have the pre shot test/breakfast/injection a little closer together. So, something like: 6:30 - test BG (no food 2 hours before this)/feed breakfast/wait 30+ minutes so food is into bloodstream (because Novolin can hit fast)/ give insulin at, say, 7:30. The reason is you want to capture BG as close to dosing time as possible because it can change over a period of 2.5 hours (6:30 to 9:00). Dosing depends on knowing that BG level close to shot time as well as how low the dose takes him mid cycle.
