New - need food transitioning tips, please!

My cat was diagnosed a few weeks ago and he eats canned once a day and free feed's on dry (well he used to). I have 6 cats and am transitioning them all off dry but did buy some DM Purina dry to help with their transition.
My question is, my diabetic also has a VERY sensitive stomach and he cant tolerate changing foods. I had him on canned fancy feast with some added Merrick to make it a bit healthier. He has had the runs or soft poop for a few days and today had water pretty much coming out of him.
I'm at a loss as to what to do to transition him. We picked up some Satiety by Royal Canin as he used to be on this and it helped immensely but I don't know if this is an ok food for a diabetic.

I'm also not sure how much he should eat to receive insulin. He ate nothing this morning so he got no insulin and he is eating well now so i assume its ok to dose him even though its not his usual time? This is all so confusing.

Ill be teaching myself to home test too, just need to get his tummy issues under control.

I happened to stumble across this, but is it possible to start a new thread with this question? Many more (and much more experienced!) eyes than mine will be sure to see it and hopefully be able to quickly answer your questions!

I did make the switch a little too quick I think in regards to food but he’s always had wet at night and dry during the day. I fed him natural balance and to me it didn’t seem moist enough so I got Merrick canned AND fancy feast and started on that. I’m 95% sure he can’t tolerate fancy feast.

He’s such a dry food driven cat that I did get the DM food-dry- and left a little out today for him.

It’s also hard as I have 6 cats that’s feed off dry that I’m trying to move to wet but a few refuse to eat wet- unless it’s the junk food.

Appreciate all the insight and help!
