Rusty broke his bounce (only to regain it this evening). The LagoonMeister spent some time mending the shark nets. Then he had to get things ready for the Full Beaver Moon Party. Busy boy!

The beans went to the farmers' market this morning. We were going to go hiking on the trails near Paul Smiths, but the day looked like it would be a good paddling day (almost no wind, even though it was pretty chilly). So we went out on a local lake for a few hours this afternoon. It's important to get in paddles when possible at the end of the season. No one else was on the lake.

I made a terrific lemon-chicken/red-potato dish in my new Instant Pot this evening. I was amazed at how easy it was: just assemble the ingredients, put them into the pot, and turn it on for the time required in the recipe. I could get used to this!! Under pressure the meal was ready to eat in 1/2 hour (and it only cooked for 15 minutes: the rest of the time was for the pressure to build up).

Oooh I am a bit jealous of your day! Every bit sounds wonderful! I am hoping for some cooler weather here so the dog and I can get out on our hiking trails (it's only just touching the 80s here :arghh:). I may have to look into one of those Instant Pots....sounds intriguing, and great for long work days!
 
Sounds like you had a wonderful day and came home to a delicious meal in your new gadget!! Can't ask for much better than that!!

That Instant Pot sounds great.....I was looking at them and unfortunately they're a little too pricey for me, but they sure look like they'd be great to have around, especially if you're out all day hiking or boating!

Yo Rusty, dude!! You goes awfully far out in da deep water today!! I'm glad you iz safe, but you didn't need to go so far out into da weeds tonight! Come on back down to da lagoon and let's go for a nice paddle, OK? ~ LagoonMeisterin China

Which model Instant Pot did you get? DH has been talking about a slow cooker at some point. Sounds like getting the right cook book is also key.

Glad you got a paddle in. So did I, just barely above freezing. All us adults dressed in our waterproof boots, merino wool, fleece and hats. The teenagers in thin layers and flip flops. :eek: No wonder they were cold.:p Looked pretty with the back layer of mountains covered in white.

I got the 6-quart IP-DUO60 V2 (7-in-1). I did some research on the cookbooks and have ordered Coco Morante, "The Essential Instant Pot Cookbook: Fresh and Foolproof Recipes for your Electric Pressure Cooker" ; and Melissa Clark "Dinner in an Instant: 75 Modern Recipes for your Pressure Cooker, Multicooker, and Instant Pot". Both cookbooks can be bought at Amazon. Melissa Clark is the food editor of the NY Times. She says that the Instant Pot makes fantastic risotto.


Sounds like you had a good paddle, too. Those teenagers could learn a thing or two!
