Orion started Prozinc on Friday. He is getting 1 unit twice daily. Should I increase his dose this evening?

Without more data from between shot times it is impossible to tell how much Orion may be dropping between shots. I would not increase the dose until you have more information during mid cycle. If he is going lower during the cycle this can cause his preshots to seem higher.
Well but Mary ann, the +5.5 today is 370. I can't imagine Orion has gone far more lower than that... He has a pattern being higher at AM and lower in PM I see.
He's not low enough to not give an increased dose.
Unfortunately my schedule will only allow me to get mid-way readings on the weekend and on Wed when I am off of work.
I plan to do a curve next Saturday. I can aim to get a reading this evening about 2 hours after his shot. I could get another tomorrow about 9 hours after his morning shot. Would this help?
Any extra data would be useful The reading 2 hours after the shot would give more information since that is about the time Prozinc starts to work...although it can be different with different kitties. The test at 9 hours would be when the Prozinc is starting to wear out, but might still give some more pieces to the puzzle.
If you can set up a spreadsheet to record you r data it can be extremely helpful to see patterns and trends, and lets anyone see what sort of results you are getting without having to read back through all your posts,

It does look like he is high and flat. I don't know the foods you are feeding -are they sure low carb?
I'd give your 1.5 another day and then increase to 2 units, on the first cycle you can monitor.
A big part of your issue could be the higher carb dry. Will he let you eliminate it? (If you do, maybe wait on an increase. It's best to make only one change at a time)
