Some ideas to consider:
Kloever could have an intermittant problem such as low grade pancreatitis, which isn't one on the regular blood tests. Maybe get a fasting fPLI to test for it?
Or IBD can be intermittent, especially since some, but not all foods can be a trigger. Ditto food allergies. Track what you feed on the spreadsheet and look for immediate OR delayed issues with the glucose. If you feed the same thing a couple meals in a row, then rotate to another food a few days in a row, you may be able to identify a possible food trigger. Look for ingredients in common vs different.
Also, avoid anything with carrageenan, which may cause inflammation, then raise glucose as a result.
