I am not sure what food to get.. Sam has been eating Iams Senior but with his diabetes we need something better. We gave him fancy feast yesterday and acted as if he was starving all day. Any suggestions??

Hey there from another person who is trying to work out what and how best to feed her cat child. 
Fancy Feast low carb varieties should be good...someone will post a very comprehensive and useful list hopefully soon.
How much FF are you feeding him per day? Are you gradually shifting over from the iams and feeding both for now?
How many units of Lantus are you on at the moment?
Be careful when making any changes from a moderate carb to a lower carb diet to do it fairly gradually and keep an eye on the blood glucose numbers by home testing (if you can. I'm still getting into that whole thing myself) and how they respond.

We haven't done any testing yet, it's been a week since we found out he wAs sick. He gets 1 unit of insulin twice a day. I am still confused by everything. We have our next vet appt. Saturday and I figure we will discuss glucose testing and diet. He's almost out food and I don't want to buy something he should be eating. Ugh not sure what to do..

For now, until you can get to the vet, i would say Fancy Feast classic varieties and i THINK the grilled ones are ok. Nothing with gravy. No soufle type ones either. Are you in the US?
How much does Sam weigh? How much do you feed him right now? One, two, four cans a day? I would put down half a can of FF 3-4 times a day if possible.
Is the iams senior dry or wet food? If dry, and if he is having issues not having it anymore, you can still give him small amounts of this i would say. At least before the vet visit and a proper reading of his blood glucose numbers.
One unit a day of Lantus is what my Dweezil is on too, for now. What number was his blood glucose at diagnosis?

You might find it helpful to do a bit of reading on feline nutrition at Cat Info.
Note that many vets have been indoctrinated by the prescription food manufacturers and think that those are the only foods which should be given. We have found that many of those maintain the need for insulin and are no better nutrition than the low carb over the counter foods. I feed all of mine Friskies pates, as they come in 13 ounce cans, are low carb, and are economical for feeding 16 cats!
