Sudden Spike After Remission

My cat (Kitty) had steroid induced diabetes at the end of January and after discontinuing the steroid and a couple of weeks of insulin and measuring her glucose levels at home, my vet said she was in remission. I stopped measuring her glucose levels and stopped giving insulin at that point. Everything seemed to be going fine until last night when Kitty had a couple of episodes of vomiting and her glucose measured as 256. I gave her 1 unit of Prozinc insulin and it brought it down to 96 throughout the day. Now tonight, her PMPS is 126 and I do not feel comfortable giving insulin at that level. I am stumped as to what caused this sudden spike and that her levels seem to be returning to normal again. The vet basically said to just keep monitoring her glucose levels at home and give insulin as I see fit. Any thoughts or advice for this situation?
