I spoke to our internist yesterday (well, he left a voicemail!) and he thinks Finnegan might be in remission. We are to test glucose once a week for the next four weeks than drop back to once a month if his numbers stay normal.
Has anyone else had this happen to their baby? We want to make sure we do whatever we can to keep Finn as he is now, without insulin, and just a normal, one-year-old cat who loves to play and talk to us. Incessantly.
We will keep the same wet food and feeding schedule. We had wondered about giving him more than two meals a day. He eats all that we give him in one sitting both morning and night.
Again, you all were my lifelines for any questions I had. I have no words to say how much I appreciate that - and all of you!

Some cats go into remission from a diet change alone, some with a diet change and a short period of insulin support. It's not the most common but it happens. So happy for you and Finnegan!
