question about fat

on cat food papers it shows fat as.. 40 50 68 etc... what does that mean. I have to stay low fat but 40 still seems high..

Just what "cat food papers" are you referring to?
You also said " I have to stay low fat but 40 still seems high." Who is the "I"? Your cat or yourself? If for the cats what says 40%?
 
I am assuming you're looking at the Cat Nutritional Chart. Low carb foods, a must for diabetic cats, will be higher in fats. You indicate you're feeding your cat Purina Pro Plan DM. There's Pro Plan (commercial) and there's Purina DM (prescription diet). If you're feeding Pro Plan, only a few selections are low carbs and under 10%.

You don't need an expensive prescription diet food like Purina DM to feed your cat. Commercial foods like Fancy Feast Classics and some Friskies Pates, to name a few, are under 10% carbs and will save you money.

If weight is an issue for your cat, smaller, controlled feeding portions will help. I don't allow my cat to graze on food. If your cat is a grazer, a timed feeder can be helpful.
 
It is fpor my cat lol! Example on the food below it is 45 fat. vet told me high protein and low everything else (carbs, fiber, fat) Carbs under 8 is what she told me to follow. Friskies pate really is good enough. It bugs me that they try to sell you high cost stuff to essentially milk the costs. I changed food anyhow. A friend is a petfood rep and can get me the merrick at great price. So main factor is always just the carbs?

All low-carb foods have relatively high fat. Calories only come from protein, fat and carbs. Thus, low-carb foods are naturally high in fat. I would just use the chad and worry abut the fat.
 
You can add 1 ounce of plain, lean poultry or beef to 5 ounces of cat food and then portion out a meal to boost the percent of calories from protein and reduce the percent of calories from fat, without adding carbohydrate.
 
EX: 1 oz lean +5 oz canned, mix well, feed 5oz, reserve 1 oz for another time.
