My kitty Shenanigans who was literally just diagnosed, hasn't even started insulin yet, had to go to the animal hospital for 2 nights, she's hopefully getting out today, they say she's doing much better.

In any event during the workup they did an US and saw intestinal thickening. The question is if it's ibd or small cell leukemia.

If it's IBD they suggest a novel protein diet. Also something low in phosphorous as she has early stage ckd.

Any suggestions for something not poultry/fish? I see some beef options, but what about kangaroo? crocodile? rabbit? Any options there?

You could try making your own food and using a novel protein. You would need to use a supplement though to ensure the food is nutritionally complete.
Or you could have a look on this FOOD CHART which also has phosphorus levels
Would you like to tell us what insulin and dose you are giving?

Many of us with IBD cats feed a raw or partially cooked diet. This is a link to a great website on Raw Feeding for IBD Cats. They also have a Facebook group that is very helpful if you have questions. I use a pre-mix, EZComplete from FoodFurLife, that is added to the raw food so it has all of the supplements to ensure my cats diet is nutritionally complete. I can source ground pork, venison, and bison at my grocery store. There are online suppliers as well.

I'd suggest taking a look at ZiwiPeak canned foods. They do not use gums (e.g., guar gum or others) or carrageenan in their products. These ingredients can cause GI upset. They have venison and a rabbit and lamb combination. I don't know the phosphorus content. However, their customer service is very good so if you have questions, email them.

There are other lines with novel proteins. I would just suggest reading the labels carefully. Sometimes, not so novel proteins are mixed in.

This is what I do for Simon. I make meals of chicken, rabbit or pork and add a completer to it. I cook the meat in an instant pot with only water. When it is cooled I grind it and add the completer. He love his meals.

My cat needs novel protein, too! The two big winners I've found are:
Feline Natural Lamb Feast: https://us.felinenatural.com/collec...-feast-canned-cat-food?variant=44315764687145

And KOHA LID Rabbit Au Jus:
https://kohapet.com/products/rabbit-au-jus-cat-food

Both have detailed nutrition facts available at the links and include phosphorus! I'm not sure what's considered to be low phosphorus.
I also supplement with ZIWI peak air dried lamb as treats and a food topper if he's being stubborn about eating, and occasionally their venison paté, but the venison isn't a kitty favorite.

Unfortunately the food is expensive. I spend probably $350 a month on food, though there is a non-diabetic, non-novel needing kitty who finishes his bowl as soon as Nox walks away a few times a day, so really that's the cost for two.
