I am controlling my cat's diabetes through low carb canned food, he's off insulin.

My other cat is obese and eats only kibble, can I gradually switch him to canned food?

1--will it make him lose weight?

2--if yes, what is a reasonable schedule so I don't throw him into fatty liver disease?

Thanks!

Yes by all means you can switch him over to canned food, and feed both cats the same low-carb diet. Have you ever visited Dr. Lisa's pages on feline nutrition? She explains it much better than I can, but here's one specifically about obesity, and it includes links to your concerns about fatty liver as well.

Are you cats grazers or meal eaters?

Typically if using dry food, cats tend to be grazers. If that is the case, then I would suggest putting out the canned food with added water (to keep it moist) and leaving it out, until it's gone or it's time for the next meal. I typically put out canned food twice a day.

Maui loves it fresh and really wet. Where Buster prefers it old and dryer (after 3 years, she is still hoping I put out the kibbles again).

If your cats eat meals and aren't grazers, then try following the same meal schedule you currently have and see if that is sufficient for their needs. You may need to add in an extra meal or two or even supplement with snacks.

No matter what, the great part is you can have all your cats eating the same food and completely remove the kibbles. This way you don't have to worry about the diabetic getting into the kibbles.
