Can lethargy be a symptom of diabetes?

Sort of but in a bad way. Untreated diabetic cats can go into diabetic keto-acidosis (DKA). One symptom of that is lethargy and not eating in addition to high BGs.
Can you provide more history?

If your cat is dehydrated he will be lethargic.
Is his mouth dry or his skin when you pull it up, slow to go back down? If so he is probably dehydrated.
As Larry asked....more history would be helpful please

So we started Felix on 2 units 1 time per day 2 weeks ago. Still have not started home testing of BG as we are leaving Tuesday for 8 days. Pet sitter will only come one time per day so canned food only once per day with dry left out. We did have him at the vet Monday for curve and when we picked him up level was 167. Just concerned leaving and disruption of diet may cause problems. Any suggestions,ideas? Dehydration not due to dehydration. Have not tested ketones yet. but he is eating fine. Prozinc is the insulin we are using.
