Lethargic but not Hypoglycemic?

Sex/neuter status: F - yes
Breed: Unknown
Body weight: 7.5 lbs
History: recently Dx with diabetes no other significant HX
Clinical signs: lethargic and uninterested in anything including treats. Blood sugar 250-300 post meal and insulin 2-4 hour post meal
Duration: 2 days seems to get better the further away from insulin dose we get and starts again after. We just started insulin 1 unit morning 1 evening right after meals.
General Location: Southern CA

My cat has diabetes and we just started insulin after her Fructosamine didn’t improve much with just diet changes. She is getting 1 unit at breakfast and 1 at dinner. After she gets it she starts acting lethargic and just not interested in anything. At first I was freaking out thinking it could be hypoglycemia however I am tracking her Blood Sugar and it is btwn 250-300 post meals. Any ideas?
 
Can you tell us what type of insulin?

I’m a little confused though, are you giving insulin 2x a day, every 12 hours?

How much in a day would you say she’s eating?

Were there any ketones at diagnosis

Here’s a link to learn more about ketones. Not enough insulin, not eating well and lethargic make me wonder about this. Do you have any ketone urine strips at home to test with? We used ketostix bought at the local pharmacy
